Yummy Recipe

I've been doing my best to actually have a quick and easy ready to roll when we get home each night. Chris is elbow deep in a base exercise this week, which means he is working nights. We don't have alot of time together each night, so quick and easy is a must. I found this little delight on another person's blog who is also stationed here. It is a good one. Chris wasn't so thrilled when I brought home avocados and tomatoes instead of Korean chicken, but he took one bite and was SOLD! And that, my friend, is what it is all about! Yummy!

Avocado Pita 'Pizza'





• 2 whole pita breads ( I actually used one thin pizza crust thingy--can't remember the name right now ;)

•1 tbsp. olive oil

•1 medium (ripe) avocado, peeled and pitted (I used 3 to accomdate the larger crust)

•1 tbsp. lemon juice

•1/4 tsp. salt

•1/4 tsp. garlic powder

•1/4 tsp. hot sauce (or more to your liking)

•1/2 lb. cooked chicken, shredded or cut in strips
•1 medium tomato, chopped (I cut up grape sized tomatoes.)

•2 cups or so Monterey Jack or Colby Jack cheese

•pepper, to taste

(We also had a bit of sour cream and salsa on the top--Delicious!)


Preheat oven to 350 F. Brush one side of each pita with olive oil. Place on an ungreased baking sheet and bake for 12-15 minutes or until browned and crisp.



Meanwhile, in a small bowl, mash the avocado with lemon juice, salt, garlic powder and hot sauce.  Spread over pitas.  Layer with the chicken, tomato and cheese.  Bake 5-6 minutes or until cheese is melted.  Add pepper to taste.  Makes 2 servings (more like 6 if you use the larger crust.

I know. We really like it too. I thought it would be really good on lavosh, but they don't sell that here. I used a thin boboli. ONe other thing that worked very well was I roasted a chicken in the crock pot the day before. We ate that one night, then used the left over chicken on the pizza. It was nice and easy.
